SMOKED SALMON BLINIS

CHILI & CRANBERRY

Makes about 35 canapes

INGREDIENTS

BLINIS
1     Cup     Milk 
1 ½  Cup     Plain flour 
1 C. at table   Baking powder
2              Eggs
1 C. To  table  Sugar
1 C. To  table  Melted butter
1 pinch      Salt flower

ACCOMPANIEMENT
212  ml       NUTRA-FRUIT Cranberry Pepper Jelly    
750 g         Smoked salmon
250 g         Cream cheese
212 ml        NUTRA-FRUIT Maple Port Cranberry
½     Cup     Finely chopped chives
1 bouquet   Fresh dill

TECHNICAL

BLINIS DOUGH
In a bowl, beat the eggs, sugar and butter together. Add the milk and the dry ingredients and mix until you get a smooth paste.

COOKING BLINIS
In a lightly buttered pan, pour a little dough at a time to form small pancakes about 5 cm (2 inches) in diameter. Cook all the mixture. Let cool. This step can be done in advance and it is also possible to use your favorite crackers.

ASSEMBLY  BITES 
Spread each small pancake with cream cheese, a spoonful of cranberry pepper jelly and a smoked salmon roll. Add a cranberry to the maple port on each cane and add a sprig of fresh dill and chives.
