CRANBERRY SALMON TARTARE

Serves 4 as an appetizer
Serves 2 as a main course

INGREDIENTS


1                           300 g Salmon filet
2 tbsp.               NUTRA-FRUIT Cranberry, Honey, Toasted Sesame Salad Dressing 

1/4 cup             Mango, diced
1/4 cup             Ripe avocado, diced
1/4 cup             Fried wontons
1 tbsp.               Japanese mayonnaise
1 tbsp.               Shallots, chopped
1 tsp.                  NUTRA-FRUIT Dijon-style Cranberry Mustard
1 tsp.                  Fresh cilantro, chopped 
1/2 tsp.             Sambal oelek
1/2                      Lime, zest and juice
Fleur de sel fresh ground pepper to taste

INSTRUCTIONS

Cut the salmon into little cubes. Mix together with all the other ingredients.  Add the fleur de sel and fresh ground pepper to taste.

TO SERVE
Shape the tartare with a cookie cutter. Decorate with fresh cilantro. Serve immediately.
