2 Pears (Bosc)
3 Apples (Cortland or Gala)
2/3 cup Brown sugar
1/2 cup Semi-salted butter
1/3 cup Fresh or frozen cranberries
1/3 cup NUTRA-FRUIT Sweetened Whole Dried Cranberries
1/3 cup Maple sugar
1/2 cup Lemon juice
1 pack Puffed pastry
Preheat the oven to 400 ° F. Peel the apples and pears, core them, then cut them into 8 quarters. For the lemon juice on top and set aside. In an oven-safe pan, melt the butter. Add the maple sugar and brown sugar. Heat for a few minutes so that all the sugar melts. Add the fruit and cook over medium heat for 10 minutes. In the meantime, slice the cranberries. Set aside. Roll out the puff pastry to the same diameter as the pan. Remove the pan from the stove, add the sliced cranberries and cover with the puffed pastry. Bake in the oven for 25-30 minutes. Bake until the top of the pastry is a nice golden brown. Turn the pie over onto a plate just before serving to keep the pastry nice and crisp.
Bosc pears and Cortland apples have a sweeter and firmer skin that works well for a Tatin.
